2016 Copper Prosecco
Our 2016 Copper Prosecco was produced using the traditional Charmat method, which involves secondary tank fermentation to retain the bubbles. The grapes were harvested at the beginning of vintage to ensure high levels of natural acidity and intense flavour development within the fruit
2016 Pewter Pinot Gris
Pinot Gris is considered to be a noble grape variety of Alsace, where the extreme cool climate produces wonderfully rich wines that contain little residual sugar. Mirroring the French heritage style, the cool climate Adelaide Hills fruit was whole bunch pressed to avoid colour and tannin extraction. The clarified juice was then completely fermented in stainless steel vats, and bottled early to capture the intense aromatics.
2016 Copper Wilde Chardonnay
This elegant Chardonnay was 100% barrel fermented using non-saccharomyces yeast strains to emulate a wild fermentation. The wine was kept in oak post fermentation for 8-10 months before being assembled, fined and filtered. This full bodied style promotes wonderful fruit ripeness, with a harmony of oak that integrates rather than dominates the palate.
2017 Copper Shiraz Rosé
Using the traditional ‘Sagniée’ method, Shiraz juice was drained from the skins within 16 hours of it being crushed, leaving the juice a vibrant magenta shade. This brand new vintage is exclusive to our Cellar Door range, and is prefect for any outdoor gathering.
2015 Copper Cabernet Merlot
Containing 70% Cabernet Sauvignon and 30% Merlot, this rich and flavoursome blend was matured in new and seasoned French oak barriques for 12 months - as to enhance the complexities of each variety.
2016 Copper Hunter Valley Shiraz
Small berries and low yielding vines have resulted in an intensely flavoured, full bodied Shiraz. Maturation in French oak provides some savoury characters, a slight earthiness, and velvety drying tannins. This wine is suitable for drinking now as a robust red, or cellar for up to 5 years for a much softer style.
